Grilled Surf & Turf Skewers with Cocktail Sauce Butter

Ingredients

  • lb shrimp, peeled & deveined 
  • 1 lb steak (ribeye or sirloin), cut into 1-inch cubes 
  • 1 red bell pepper, cut into chunks 
  • 1 zucchini, sliced into half-moons 
  • 1 red onion, cut into chunks 
  • 2 tbsp olive oil 
  • 1 tsp salt 
  • ½ tsp black pepper 
  • ½ tsp smoked paprika 
  • Wooden skewers (soaked in water for 30 minutes) 

 Cocktail Sauce Butter 

  • ¼ cup Kelchner's Cocktail Sauce 
  • 4 tbsp melted butter 
  • 1 tbsp Worcestershire sauce 
  • 1 tsp lemon juice 
  • 1 tbsp chopped parsley

Directions

1. Preheat grill to medium-high heat (about 400°F). 

2. Assemble skewers by alternating shrimp, steak cubes, and veggies. Brush with olive oil and season with salt, pepper, and smoked paprika. 

3. Grill skewers for about 3-4 minutes per side, flipping once, until shrimp is opaque, and steak is cooked to your liking. 

4. Make the cocktail sauce butter by whisking together Kelchner's Cocktail Sauce melted butter, Worcestershire, and lemon juice. 

5. Brush skewers with cocktail sauce butter during the last minute of grilling for a glossy, flavorful finish. 

6. Serve hot, garnished with chopped parsley and extra cocktail sauce on the side for dipping.
