Seafood Stuffed Avocados

Ingredients

  • 2 ripe avocados, halved and pitted
  • 1 cup cooked shrimp, peeled and deveined (and/or tuna/crab)
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup Kelchner's Tartar Sauce
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Optional: paprika for garnish

Directions

1. In a mixing bowl, combine the cooked shrimp, celery, red onion, Kelchner's Tartar Sauce, lemon juice, salt, and pepper. Mix until well combined.

2. Scoop out a little of the avocado flesh to create more space for the filling if desired.

3. Spoon the shrimp mixture into each avocado half.

4. Garnish with paprika if desired and serve immediately.
