Sriracha Shrimp Pasta Salad

Ingredients

  • 8 oz. pasta
  • 1 lb. shrimp, peeled and deveined
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, thinly sliced
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup green onions, chopped
  • 1/2 cup Kelchner's Spicy Sriracha Sauce
  • 1/4 cup mayonnaise
  • 2 tbsp honey
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)

Directions

1. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool.

2. Season the shrimp with salt and pepper. In a large skillet, heat a little oil over medium-high heat. Cook the shrimp for about 2-3 minutes on each side until they are pink and opaque. Remove from heat and let cool.

3. In a small bowl, combine Kelchner's Spicy Sriracha Sauce, mayonnaise, honey, and lime juice. Mix well.

4. In a large mixing bowl, add the cooked pasta, cooked shrimp, cherry tomatoes, red bell pepper, cucumber, and green onions.

5. Pour the dressing over the pasta and shrimp mixture. Toss gently to coat everything evenly.

6. Season with salt and pepper to taste. Mix well. Cover and refrigerate for at least 1 hour before serving. Garnish with chopped fresh cilantro if desired.
