Mashed Maple Chipotle Sweet Potatoes with Quick Candied Pecans

Ingredients

Topping
  • 3 tbsp butter
  • ¾ cup packed brown sugar
  • ½ cup chopped pecans
Sweet Potatoes
  • 4 pounds sweet potatoes
  • ½ cup heavy cream
  • 2 tbsp butter
  • ¼ cup Kelchner's Smoky Maple Chipotle Marinade
  • Salt and pepper to taste

Directions

1. In a medium bowl combine all the topping ingredients. Place in fridge until needed.

2. Skin and dice sweet potatoes.

3. Place sweet potatoes in large pot of boiling water for 20-25 minutes or until fork tender.

4. Drain potatoes, mash potatoes with either an electric mixer or potato masher. Add cream, butter, and marinade.

5. Add salt and pepper to taste.

6. Preheat oven to 350F

7. Transfer potatoes to a greased oven safe dish. Top with topping mixture.

8. Bake for 45 minutes or until it is hot and bubbly.
